leon, nicaragua

Leon was the first stop where we sampled the never ever ever ending supply of the Nicaraguan local cuisine Gallo Pinto, which is essentially rice and beans. Even way back in Mexico, we had been warned of this local obsession with people saying, "You're screwed for food when you get to Nicaragua, all they have is rice and beans." Some people would say "Ooooooh man, I am soooooo sick of rice and beans!" But luckily, we love rice and beans and I was happy to have it with every meal. To top it off, there was a lady with a street cart that made a mean Gallo Pinto and salad for about $1.50AUD. Kicking ourselves that we didn't take a photo of that lady, she was always there with some seriously good street food offerings.

So while in Leon, we boarded down a volcano, camped next to a volcano, saw the sun set over a volcano, saw the sun rise while standing on a volcano, saw lava while looking down inside a volcano (yessss, finally) and drank a few bottles of Flor De Cana while enjoying some makeshift S'mores (thanks to our American friend Mike).

We then headed to Las Penitas where we simply laid by the beach for no less than three days. Perfect.
